INDO - PORTUGUESE CULINARY WORKSHOP HELD AT
V. M. Salgaocar Institute of International Hospitality Education, Manora-Raia
Tuesday, 6th December, 2016 an Indo-Portuguese Culinary workshop was organised by SEMANA DA CULTURA Indo Portuguese Goa, at V. M. Salgaocar Institute of International Hospitality Education, Manora-Raia.
Portuguese Chefs Bernardo Agrela, Andre Freire and Rahul Gomes Pereira conducted the workshop.
Participants had an opportunity to follow the Chef’s skills live on screen which was held in the Demo Classroom having a sophisticated work-station equipped with high definition cameras capturing the demonstration of Traditional Portuguese dishes such as “Escabeche”, “Pataniscas de Bacalhau”, Arroz de Marisco”, “Açorda”, “Farofias” and “Leite de Crème”. The Participants were also given to taste the authentic Portuguese specialities prepared by the Chefs.
A successful event for food lovers.

Children's day Celebration at VMSIIHE
The Joy of Making Children Smile
National Children’s day is celebrated on 14th November, 2016 to mark the birthday of Pandit Jawaharlal Nehru. He was fondly called Chacha Nehru (Uncle Nehru) or Chachaji (Uncle) by the kids and emphasized the importance of giving love and affection to children, whom he saw as the bright future of India.
To commemorate the essence of this day, V. M. Salgaocar Institute of International Hospitality Education, Manora-Raia, chose to celebrate it in a unique way. The T.Y. B.Sc. students hosted a ‘Children’s Day Special’ at the Institute for 20 beautiful little girls from St. Anthony’s Home (Nuvem) on 17th November, 2016.
The little girls aged 4-16 years were welcomed at the Institute with colourful tiaras and name badges. A welcome drink and yummy snacks made especially for them by the final year students awaited them in the cafeteria. The students gave them a tour of the campus which was followed by a lot of fun games, spot prizes and lively entertainment. The programme wound up with dinner and distribution of goodie baskets to every child.
The students aim was to celebrate Children’s Day and put a smile on all of their faces. However as the little girls left the Institute with happy goodbyes, the students had a sense of fulfilment and also a realisation as to how much they could do for other children less fortunate than them. They realised that it doesn’t take a penny to make someone smile but just a bit of time spent with them is enough to make them happy.
Blood Donation Camp
The Social Service Club of VMSIIHE, Manora-Raia, Goa organised a Blood donation camp on 19-10-2016 at the Institute.
Team led by Dr. Vasundhara Desai from Hospicio District Hospital, Margao, conducted the camp. Amongst the 42 donors who voluntarily donated the blood were students and staff of the Institute. Refreshment was provided by the Cuisine Club of the Institute to all the donors.
Dr. Vasundhara thanked the donors and presented an amount of Rs. 1050/- to the Social club as a token of appreciation and a Certificate to the Institute from the Govt. of Goa. All the donors also received a card.
Prof Irfan Mirza, Director was present at the camp and congratulated all the donors.
Fiesta Mexicana at VMSIIHE
Theme night was an assignment that we the 1st years were looking forward to as soon as we became a part of the VMSIIHE family. The seniors spoke so much about it that our excitement knew no bounds. The 3rd term began and it was finally time for the Theme Night. Our Group were struck with a brilliant idea of Mexican night simply because the food was very similar to Goan spices and flavours that would be a treat for the taste buds. Thus was the birth of Fiesta Mexicana.
The initial stage was very stressful as we had to decide upon the food, service, decor and finance but day by day with the support of our faculty it was made far easier for us. The whole experience of looking for sponsors and suppliers for various items was a firsthand experience and a very good one indeed.
I finally understood how it felt to be a manager. Though the position was stressful, the adrenaline rush was just a boost to me and I really loved it. I also learnt that being a manager was not just a job meant to boss people around but was one filled with responsibilities and duties. The most important thing that I learnt was to manage my staff and help them in every way I could especially through motivation.
With the help of Dilmon Nunes along with the guidance of faculty Chef Stefan Jerkfelt and Chef Sujatha Madhavan, a brilliant Mexican menu was designed with Tortillas, Burritos, Nachos and other Mexican delicacies. The service team was guided by Prof. Irfan Mirza and Ma’am Gauri Patil and was headed by Reagan Quadros.
15th April 2016 had finally arrived and it was the day for Fiesta Mexicana to come alive. It was our shot at the spot light, it was do or die as our two months of hard work was finally going to payoff. And Yes, Fiesta Mexicana was a great success.
Every small detail we paid attention to was appreciated, the food was fantastic, ambience was brilliant and the service was excellent and prompt. Our efforts were clearly appreciated by our guests and for me that was the time that I learnt of job satisfaction and finally realized that I am at the right place doing the right thing and enjoying it to the fullest. At the end, my entire student team could say that we learnt something valuable through this experience and we had a lot to take back. This event gave us all a further assurance that these were our stepping stones to a great future.
As a part of the 3 Year BSc. International Hospitality Management training program, the First Year Students of V.M. Salgaocar Institute of International Hospitality Education, Manora Raia organised banquet function on 5th & 7th April 2015 in cafeteria. The Invitees for the function were welcomed and escorted to the banquet hall which was set for the occasion. The theme for 5th April was United Nations meet and for 7th April Academy Awards. Theme banquets are being organised so as to help student inculcate the idea of having a real banquets which will help them at some point in their career. We here at vmsiihe work on the overall growth of the students as we are focused in making them pioneers in the field of hospitality.
Students did all the pre preparation for the event from the designing of Name tags, menu cards, delicious food ,synchronized service even going the extra mile to make their guests very comfortable from the start to the farewell
Basically a banquet is a synchronised service. Where everyone is served at a same time. From starters to dessert everything is well planned in advance for smooth functioning of service. There is head table with head waiters, once they give the signal to all the other waiters the service is started. Depending on type of theme the guest, host are required to give speeches.
It’s a wonderful event where in students get the chance to build up their confidence, team spirit and increase their service knowledge.
VMSIIHE Jazzes up
A Jazz Night was organised on 13th April 2016 at the Zakuro Restaurant, V.M.Salgaocar Institute of Hospitality Management with 42 guests gracing the event with their presence. The fine-dining styled dinner began during the early hours of the evening and was a major success.
The Jazz night is a part of the continuous assessment component in assessing the performance of the students in the subjects of F&B Service and Food Production.
As a student Host welcomed the guests, welcome drinks were served, the doors to the restaurant were opened and the guests were seated at their reserved tables. Lionel Noronha, the Event Manager gave a heart-warming welcome speech ensued by a mouth-watering Menu briefing by the head Chef, Ujjwal Tripathi.
This was followed by the commencement of music courtesy of the live one man band – Mr. Cornelius Rodrigues who provided heart rendering instrumental jazz melodies with his saxophone and flute setting up the ambience for a beautiful evening. In the meantime, guests were led to the salad Bar where they were given a choice of 5 different types of exotic salads. This was followed by a creamy and delicious soup served to the guests by our well trained service team.
One of our own – Bob Abreo, took to the stage and performed ‘Piano Man’ accompanied by his father Herman Abreo on the electric guitar as rounds of 3 appetizers – Arancini, Meatballs wth Tomato Sauce and Caprese on a Skewer were served to the guests in a cocktail service style.
The buffet dinner service that followed had a beautiful display of Ricotta, Parmesan and Spinach Ravioli, Risotto with 2 cheeses, Chicken in Red Wine Sauce and Spaghetti Fruit di Marie. The tasty dishes had the guests going back for more.
There was also a Live Pasta counter manned by two students from the kitchen team–Ashbel Dourado and Cliffa Fernandes. The guests chose the type of pasta they wanted and the entire pasta was prepared with its sauces in front of the guests on a flambé pan. This really had the guests left in awe.
During the dinner service two enthusiastic guests got together to perform an impromptu Jazz performance. Herman Abreo on the electric guitar and Alan Abreo on the keyboards performed ‘Summertime’ – a flashback from the early 30’s. The performance received a great round of applause from the guests present who were completely taken up by the beautiful melody that took them down memory lane.
At this point, desserts were served to the guests. The delectable Brownies with Mint Parfait ended the 5 course meal on a wonderful jazzy note as Cornelius continued to jazz up his instrumental performances too.
The night ended with a display of a moving video displaying the efforts of the team that put the night together and how they had worked for weeks on end in preparation for this perfect night. The guests appreciated these efforts. Some of the guests even came up-stage to congratulate and express their appreciation for the dedication and hard work put into this event by both the Food Production and the F&B Service Teams.
The event manager, Lionel Noronha gave the vote of thanks followed by a note of appreciation by The Director – Prof. Irfan Mirza and Food Production Faculty – Chef Stefan Jerkfelt. The event then concluded with a final performance by Cornelius which had the guests enchanted until the last note was played.
A truly memorable night for our VMSIIHE team.
